For Muffins Sieve refined flour with cocoa powder, baking powder and salt. Mix together softened butter with sugar and beat well with a wire whisk or electric beater till light and fluffy. Mix in one egg at a time. Step 2 Fold in flour and cocoa mixture two to three spoons at a time, adding a little of buttermilk to make a smooth batter. Lastly mix in vanilla essence. Pour batter into prepared muffin moulds, filling them only two thirds. Bake at 180ºC for thirty five to forty minutes. Remove onto a wire rack to cool. For Icing Mix together the butter, icing sugar and vanilla essence in a bowl until smooth. Add colour to it. Then fill it in the piping bag. Write love you on muffins.
