For Muffins Sieve refined flour with cocoa powder, baking powder and salt. Mix together softened butter with sugar and beat well with a wire whisk or electric beater till light and fluffy. Mix in one egg at a time. Fold in flour and cocoa mixture two to three spoons at a time, adding a little of buttermilk to make a smooth batter. Lastly mix in vanilla essence. Pour batter into prepared muffin moulds, filling them only two thirds. Bake at 180ºC for thirty five to forty minutes. Remove onto a wire rack to cool. For Icing Mix together the butter, icing sugar and vanilla essence in a bowl until smooth and peaks up. Add your favourite colours to it and fill it in the piping bag. Add shapes to the pipe and write love you on the muffins.
