Salad is the essence of summer on a plate It's very easy to make, but you'll need to buy sweet young corn, tender enough to eat raw, as well as perfectly ripe avocados and the freshest cucumbers Feel free to add cherry tomatoes to relish the taste.


  • 1 ear corn (husk and silk removed; tip cut off)
  • 1 avocado, halved, pitted, peeled, and diced
  • 2 pints cherry, grape, or pear tomatoes, halved (or quartered if large)
  • 2 scallions, thinly sliced
  • 1 tablespoon vegetable oil, such as safflower

    Take the corn in a large wide bowl; with a sharp knife, carefully slice downward to release the kernels.
