Sweet Layered Crepes is a Healthy Romantic Breakfast I have gifted my Hubby as this is his favourite. The mix of Banana,Eggs,Coconut and nuts is a terrible combination. The Romantic day started with the Display in the Bed with a combination of Beet Fusion Morning Drink and dates to crunch in between.

Ingredients for the crepes: Wheat Flour-1 cup Salt-to taste Water-enough to make batter Ingredients for filling: Boiled Banana Mashed (Ripe plantains) -1 Eggs-2nos Coconut-2tbsp Cashew nut chopped -1/4 cup Almond slices - 2 tbsp Sugar-4tbsp Ghee- 1/4 cup Ingredients for dipping the crepes: Eggs-2 Sugar-1tbsp Cardamom powder-1/2tsp Milk-1/4 Cup

Step By Step Method

  • PREPARATION OF CREPES: Add Wheat flour and salt in a bowl.Make a thin batter. Heat a non-stick tawa, pour in the batter and make really thin crepes. PREPARATION OF FILLING: Heat 1tsp of ghee in a non-stick pan add cashew nuts and almond. Saute for few minutes until golden brown.Keep aside. Add 1tsp of ghee and add mashed bananas and 1tbsp of sugar.Saute until golden brown in color.Keep aside. In the same pan stir fry eggs by adding 1tbsp of sugar.Keep aside. Addd 1tsp of ghee,coconut and sugar.Saute until the coconut absorbs all the water contents in it. Mix it with eggs for a minute and keep aside. Mix the banana,coconut, egg and nuts.Give a good stir and keep aside.Filling is ready TO DIP THE CREPES: Beat eggs with milk, cardamom powder and sugar in a wide plate. ASSEMBLING THE CREPES: Grease a thickened bottom non-stick sauce pan with 2tsp ghee. Take a crepes and dip it in the egg milk mixture and put it in the pan. Spread a part of filling on top of it (banana, egg-coconut stir fry, cashew and almonds). Now cover it with another crepes dip in egg batter.Above that spread another part of filling and continue the process for layers. Finally put the the top layer of crepes. Pour the remaining egg milk mixture on top of it. Cook covered it on low flame for about 20-25 minutes.Carefully flip in to the other side in a nonstick and cook for another two to three minutes.Cut in to pieces and serve warm.
