Sukhi Arbi makes a delicious snack as well as a fasting food. This is served with fresh mint leaves and has some aromatic carom seeds in it to give a unique taste.
Ingredients

250 grams of Colocasia roots ( pressure cooked till tender)

1 teaspoon of Coriander Powder

1 teaspoon of Red Chili Powder

1 teaspoon of Mango Powder

Rock salt to taste

Fresh Mint leaves for Garnish

1 teaspoon of Carom seeds

Oil for cooking
Step By Step Method

Step 1
Peel the Colocasia roots individually once they are pressure cooked. Lightly press them to flatten them a bit between your palms.
Step 2
Now deep fry them or pan fry till light golden brown.
Step 3
Take a pan, add the cooking oil. Once hot roast the carom seeds in it.
Step 4
Now add the coriander and red chili powder and switch off the heat source to avoid burning the spices.
Step 5
Now add the fried colocasia roots, mango powder and salt. Mix them up well to coat the colocasia roots well. Serve garnished with fresh mint leaves.
