Sweet potato is a nutritious root vegetable that can be relished as a chaat or as a Halwa. It is rich in Vitamin A that nourishes you during the fasting and festive days.
Ingredients
2 large boiled Sweet Potatoes
8 tablespoons of Ghee
½ teaspoon of Cardamom Powder
4 tablespoons of Sugar
Pinch of Saffron
10-12 Cashewnuts halved
Step By Step Method

Mash the boiled sweet potatoes.

Heat Ghee in a kadai, stir fry the cashew nuts till golden brown and keep aside.

Now stir fry the mashed sweet potatoes for 5 minutes.

Add the sugar and again stir fry for another 5 minutes.

Mix in the cardamom powder.

Now add the saffron and give it a good mix.

Continue cooking the halwa on low flame for another 10-12 minutes till the ghee leaves the sides of the halwa.

Stir in the golden roasted cashew nuts and serve either hot or cold.
