Ingredients for Ragda:

  • 3 cups of pressure cooked White Peas.
  • Salt to taste.
  • 1 tablespoon of Ghee.
  • 1 teaspoon of Turmeric powder.
  • 1 teaspoon of Cumin Seeds
  • 1/2 teaspoon of Asafoetida
  • 1/2 teaspoon of Rock salt.
  • 1 teaspoon of Garam Masala.
  • 2 finely chopped Green Chillies

Ingredients for Patties:

  • 3 cups boiled and mashed potatoes.
  • Salt to taste.
  • 1/2 teaspoon of Turmeric powder.
  • 1 teaspoon of Cumin seeds.
  • 1 cup powdered bread crumbs.
  • 2 tablespoon of Oil.

Step By Step Method

  • Step 1

    Method for Ragda:

    • Heat ghee in a vessel and add in cumin seeds along with Asafoetida.
    • Add the cooked white peas along with other ingredients.
    • Mix well and allow to simmer. Add some water to get little gravy.

    Step 2

    Method for patties:

    • In a bowl take mashed potatoes, add in salt to taste and turmeric powder.
    • Mix well and divide into small balls of the desired size.
    • Make these into small round shaped patties. Repeat with the rest.
    • Coat each with bread crumbs and keep aside.
    • Take a non-stick frying pan, heat some oil, and place these patties to roast them into a golden brown colour on both the sides on low heat.


    Ingredients for garnishing:

    • Nylon sev
    • Finely chopped coriander leaves
    • Sweet dates chutney
    • Pomegranate pearls
    • Tangy and spicy-  Mint and Coriander Chutney
    • Finely chopped onion

    To serve

    Take a glass bowl,  place one patty, cover it with Ragda, followed by chutneys, onion, sev, pomegranate pearls and coriander leaves.
