This classic pineapple sponge cake makes a fun centrepiece for afternoon tea and brings back many childhood memories.


100 gms.of Maida
100 gms.of Butter
100 gms.of Sugar
¼ tspn of Baking Powder
2 no. of Eggs
1 tspn of Pineapple essence

Step By Step Method

  • Step 1

    Sift maida & baking powder. Keep aside.

    Step 2

    Beat the butter & sugar till it becomes light and fluffy.

    Step 3

    Beat eggs and add pineapple essence together until it becomes more than double in volume.

    Step 4

    Fold in maida gradually till all the maida is used. Add milk.

    Step 5

    Grease the baking tray and pour the batter in it and place it on the grill rack. 

    Step 6

    Bake at 180o Centigrade for 30 minutes. Cool on a wire rack and serve.

Sunita Chawla is a renowned cook who consults for many companies and has written many recipe books on microwave, OTG, and conventional cooking.

Having done her BA in economics from Madras university, she developed and interest in cookery after graduation and went on to do a hostess course and hotel management with Applied Nutrition, Adyar. She also did a bakery course from Bakers Institute, Bangalore. Going by her family recommendations, she she started participating in cookery competitions and won prizes often.
