Phirni is a delectable sweet pudding served in small earthen bowls called shikoras during festive occasions. It is always relished chilled.


¼ cup of soaked and ground basmati rice to a rava consistency

1 liter of milk

1 cup of sugar

5-6 green cardamoms powdered

15 blanched and sliced almonds

12-15 strands of Saffron



Step By Step Method

  • Heat the milk, take out 1 tablespoon of hot milk in a small bowl and stir in the saffron strands lightly crushing them with a spoon. Keep aside. Once the milk starts boiling, keep the heat source to low, add in the ground rice and sugar. Let it cook with the sauce pan kept open. Keep stirring for a good 15-20 minutes till the ground rice has completely cooked. Add in the sliced almonds (keep some aside for garnish), saffron dissolved milk and cardamom powder. Now cook it further for 5 more minutes, till the phirni thickens. Once cooled, pour them in small earthen bowls, cover them and refrigerate them for 1-2 hours. Serve them chilled.
