This is a simple, tasty and vegetarian version of Shami kabab.This recipe can also be made healthy by using Prestige air fryer to cook the paneer shami kabab. Paneer is one of the healthiest cheese available and also rich in protein.It can be served hot with mint-coriander chutney or Ketchup-mayonnaise sauce.


1-One medium size onion finely chopped 2-One handful coriander leaves finely chopped 3-2 large green chillies finely chopped 4-Salt 1 tsp or as per taste 5-Red chilli powder-3/4 tbsp 6-Turmeric powder-1/4 tbsp 7-Coriander powder-1tbsp 8-Cumin (Zeera) powder-1/4 tbsp 9-Garam Masala powder-1/3 tbsp 10-Roasted Channa dal (Besan) powder- 6 tbsp 11-Refined flour (Maida) - 2 tbsp 12-Freshly made paneer from 1 litre of milk 13-2 lemon to make paneer from milk 14-Oil for frying 15-Ketchup-3tbsp 16-Mayonnaise-2 tsp

Step By Step Method

  • Step 1- Boil the milk( 1 litre ) and allow to cool for 5 mins once boiled.Add the juice of 2 lemons into this milk and stir well. Allow to rest for 5 mins. Step 2- In a pan, dry roast the besan powder till golden brown or till it leaves an aroma.Allow to cool. Step 3-In a bowl with muslin cloth, pour the curdled milk and drain the excess water by tying the cloth and squeezing the excess water. The paneer needs to only be drained of excess water, still being soft to touch. Step 4-Mix all the ingredients in a bowl and let it rest for 5 mins Step 5- Make kebab shapes out of the mix using hands that are wet with water. Step 6- In a heated pan,pour oil and once oil is hot,shallow fry the paneer shami kabab turning both sides till golden brown.Remove in a plate with tissue paper.This process can also be done using prestige air fryer to make it healthier by cooking in the air fryer for 10-15 mins or until golden brown. Step 7-Mix the ketchup and mayonnaise in a small bowl and serve with the hot Paneer Shami Kabab.
