Hot ghee vadas with chicken curry as accompaniment which is a classic and traditional andhra combo made for festive occasions


For Nethi Garelu Urad dal -200 gms Sliced onion -1 Green chillies -3-4 Mint leaves Coriander leaves Curry leaves Finely chopped ginger -1/2 inch Salt to taste Ghee -300 gms For Chicken curry Chicken - 1/2 kg (preferably leg and thigh pieces) Chilli powder -1 tea spoon Turmeric powder -1/2 tea spoon Salt to taste Fresh ginger garlic paste-1 tea spoon Green chillies -2 Dhaniya Powder-2 tea spoons Garam masala - 1/2 tea spoon Shahi jeera -1/2 tea spoon Oil -1 table spoon

Step By Step Method

  • For Nethi Garelu Soak urad dal over night. In the morning, grind the dal to fine smooth paste with little water. To the paste add choped ginger, sliced onions,chopped chillies,mint leaves,curry leaves and coriander leaves. Make small mounds of vada paste ,press them in circular fashion on a wet cloth. Heat ghee in a kadai and slowly slide the vada paste shaped as donut into the ghee and fry till golden brown. Remove them and place on oil obsorbing tissues. For Chicken curry Heat oil in a pan. Add shahi jeera . After shahi jeera crackles, add sliced onions, green chillies,ginger garlic paste, mint,coriander leaves and mix well. Add chicken pieces,Chilli powder, turmeric powder,salt to taste and cook well for 5 minutes on high heat. Add little water and let it cook for another 5 minutes or till chicken is tender. Then add dhaniya owder, garam masala and mix well.Let the curry simmer in low heat for another 5 minutes. Garnish with mint leaves. Serve with Hot ghee vadas.
