Lentils and rice go well with this grilled vegetable medley.


Ingredients

  • 4 Japanese eggplant, sliced

  • 1 bell pepper, sliced

  • 1 large onion, cut into 8 wedges

  • 1/4 cup olive oil

  • 2 Tbsp. lemon juice

  • 2 tsp. garam masala

  • 2 cloves garlic, minced (2 tsp.)

Step By Step Method

  • 1. To make Vegetables: Toss together all ingredients in bowl. Season with salt, if desired. Let stand 15 minutes.

    2. To make Raita: Stir together all ingredients in medium bowl.

    3. Preheat grill or grill pan over medium heat. Grill bell peppers 8 minutes, onion 6 minutes, and eggplant 5 minutes. Serve with Raita.
