Hot steaming soup with rich coconut milk tastes perfect with appams, hot steamed rice on a wet rainy day.


  • 1 Bay Leaf
  • 1 inch julienned Ginger
  • 1 teaspoon of crushed Pepper
  • ½ cup of thinly sliced shallots
  • 2 Cloves (crushed)
  • 2 cups of thin Coconut Milk
  • 1 cup of thick Coconut Milk
  • 2 tablespoons of Coconut Oil
  • Salt to taste
  • 4 medium Potatoes (chopped)
  • 10-12 Curry Leaves

Step By Step Method

  • Step 1

    Take a saucepan, add coconut oil and sizzle the crushed cloves and pepper. Add the bay leaf.

    Step  2

    Now add in the sliced onions along with the juliennes of ginger.

    Step  3

    Fry the onions till translucent.

    Step  4

    Add the curry leaves and the chopped potatoes.

    Step  5

    Cook the potatoes covering the saucepan with a lid along with thin coconut milk till tender.

    Step  6

    Now add the thick coconut milk, salt and cook further for 2-3 minutes under low flame.

    Step  7

    Take care that it does not boil, to prevent the coconut milk from curdling. Serve hot with steamed rice or appams.
