Recently I got the purple corn flour from Brazil, so I tried something new and this healthy breakfast recipe for my family.


Ingredients

2 tbsp grated Corn 3 tbsp purple Corn flour 1 1/2 tbsp sugar 1/2 tsp cinnamon powder 1/2 tsp dry ginger powder 1 tbsp sweet potato pulp 1 cup water 1 1/2 cup milk 1 cup chopped fruits ( orange, grapefruit,Apple,pomegranate, kiwi) Few cashew nuts 1 tbsp ghee

Step By Step Method

  • Heat ghee in a pan then add grated corn and cook for 2 minutes. Then add purple corn flour, sugar, mashed sweet potato mix it well. Then add water, cook for 2 minutes, then add milk cook for one minute sprinkle dry ginger powder, cinnamon powder stir it constantly reduce it, boil for 1 minute. I like the consistency to be thick. Then add chopped fruits again cook for 2 minutes, keep aside for about half an hour, serve chilled, garnish with pomegranate seeds and cashew nuts.
