Eggless caramel dessert is a custard dessert with a layer of caramel sauce . It is a smooth melt in the mouth dessert made with caramel and bread slices. It's a easy and delicious dessert which can be enjoyed on any special occasion .

Bread slices - 5-6 slices Milk - 1.5 cup Sugar - 1 cup Custard powder - 1/4 cup Ghee/butter - 1 Tbsp Vanilla essence - 1 Tbsp For the caramel - 2-2.5 Tbsps of sugar 1 Tbsp of water

Step By Step Method

  • For the caramel glaze - Heat a pan on low flame ,add 2-2.5 Tbsp of sugar and 1 Tbsp of water . Use a spoon to stir this mixture while the sugar is melting . After a few seconds , lots of bubbles will appear in the sugar solution . Keep stirring so that the sugar doesn't burn around the edges. Keep stirring until you get an even golden color . Switch off the flame and with the help of tongs or gloves , lift the pan and quickly tilt and move the pan , so that the caramel gets coated evenly on all sides. Be quick and careful while doing this.. as the pan is hot and caramel starts setting as it cools. For the bread mixture - Remove the crusts of the bread slices by cutting it's corners. Cut them into cubes and run it into a mixer for a few seconds to powder it . In a pan... add milk , sugar and vanilla essence . Heat it on a medium flame and stir until the sugar dissolves ( Do not boil the milk ) After the sugar dissolves , lower the flame and add the custard powder and mix well ensuring that there are no lumps . After it's dissolved , within a few minutes.. you'll notice that the mixture starts to thicken . Take off the flame and add ghee and mix well . Add the powdered bread slices and mix gently . Spoon this mixture on the caramel ( after it's set ) and spread evenly . For steaming the dessert - Boil required amount of water in a broad pan or a pressure cooker in which the dessert pan easily fits . The amount of water depends on the size of the pan/cooker .The water should touch about 1-1.5 inch above from the base of the dessert pan . Boil water in the cooker and place the dessert pan in it . Cover the dessert pan with a plate or an aluminium foil and make small holes in it using a toothpick . Cover the lid of the pan/cooker tightly . Remove the vent/whistle. Steam the dessert for 20-25 minutes till it sets . Serving the dessert - You can enjoy it warm or to get a neat slice , you can refrigerate it for couple of hours and then serve . Garnish with cream and enjoyy!
