  • 1 cup Urad Dal
  • 2 teaspoons of  Rice          
  • Fresh curd
  • Powdered  Rock Salt as needed for Dahi (Curd)
  • Oil for deep frying
  • 2 tablespoons of  finely chopped fresh Coriander leaves
  • 2-3 teaspoons of  Boondi
  • A pinch of  Chaat masala
  • A pinch of  Chilli powder
  • 1 teaspoon of Sweet Chutney
  • 2 teaspoons of grated Carrots

For seasoning

  • 1 teaspoon of Mustard seeds
  • ½ teaspoon of Cumin Seeds
  • A few  Curry leaves
  • 2-3 finely chopped Green chillies

Step By Step Method

  • Step 1

    Wash and soak Urad dal and rice together for 3-4 hours.

    Step 2

    After 3 hours remove water completely and put in the mixer grinder or grinder along with rock salt as needed.

    Step 3

    Grind it to a smooth paste by adding very less water. (Note: if the batter has too much water, the vadas will drink more oil and will be soggy) So the batter should be of thick consistency.

    Step 4

    Take the smooth ground batter and whisk it using the whisker till it becomes frothy, which makes the vadas  fluffy and crispy.

    Step 5

    Heat the oil in a pan.

    Step 6

    Take a small amount of batter and make as vadas with the hole in the middle. Or take a plastic sheet or banana leaf apply oil to it. On that add some batter as a small round shape and make like vadas and deep-fry in the hot oil.

    Step 7

    Deep fry the vada in oil until it becomes golden brown. Take care you are frying at a medium flame.(otherwise, the outer layer will cook fast and inner will remain uncooked)

    Step 8

    Remove the cooked vadas and add it immediately to the bowl which has cool water.

    Step 9

    Immerse it in the cold water for 20 seconds and squeeze the water.  Add it to the dahi.

    For making dahi:

    • Whisk the Dahi and add salt.
    • Add the tempering to that using Mustard Seeds, Cumin Seeds, Curry leaves and add chopped green chillies. Add this to the dahi and mix well.

    Step 10

    Now add the Vadas which have been soaked in the water to the dahi. Garnish with coriander leaves, boondi, grated carrot, chat masala, red chilli powder and sweet chutney.
