CHAK HAO PUDDING / BLACK RICE PUDDING is most popular dessert dish from North Eastern part of India. It is the traditional and healthiest rice pudding specially from Manipur. The bran hull of black rice contains one of the highest levels of anthocyanins found in food. It is A Rich Source Of Antioxidants, low in fat and a good source of healthy carbs,low in calories and a better source of fiber.,


Black rice -1 cup Palm jaggery-1 cup Milk -half liter Clarified butter/ghee -2 tsp cardamom 8-10 pieces Fresh coconut one piece Sweet mango - 1 Pandon leaf 1 Sufficient water

Step By Step Method

  • 1- Wash one cup of black rice and soak it for 3 hour.s 2. Drain the water.. again add fresh water. wash the rice and trans it it a cooker vessel with sufficient water -put pandon leaf-cook well with one or two extra whistles. And let it cool. 3. Boil the milk on sim fire until it becomes half/little less than half.. (thick in consistency) 4. Great the jaggery or smash and powder it. 5. Take out the cardamom skin, put seeds in grinder to powder it. 6. Grate the coconut -trans into mixer jar along with the water -put on mixer to make the paste and with the help of strainer filter the coconut milk. 7 . Heat the pan, put clarified butter/ghee, and jaggery and allow it to melt-on sim fire. 8. When jaggery melts- add cooked black rice mix well 9. Then add powdered cardamom and coconut milk stir well for two minutes -and allow watery content to evaporate little- turn off the fire .Allow it to set and cool slightly. 10. Cut mango into small pieces. 11. Trans pudding from pan to serving bowl .Garnish with mango pieces -put condensed milk on it. 12. Chak hao pudding/Black rice pudding is ready to eat.
