It's a spicy dish which can be served dry as well as with curd. We first need to prepare the dry masala for that. Then, we will marinate the fresh brinjals with it and will cook it.

Ingredients for dry masala: 1 cup gram floor (besan) 1 cup grated coconut 1 chopped garlic 1 table spoon red chili powder 1 table spoon coriander powder 1 table spoon sugar 3 table spoon oil 1/2 table spoon salt 1 table spoon aamchur powder chopped parsley Ingredients for brinjal cooking: 2 sliced Brinjals 3 table spoon oil 3 table spoon water

Step By Step Method

  • Step 1: Preparation of dry masala Ingredients: 1 cup gram floor (besan) 1 cup grated coconut 1 chopped garlic 1 table spoon red chili powder 1 table spoon coriander powder 1 table spoon sugar 3 table spoon oil 1/2 table spoon salt 1 table spoon aamchur powder chopped parsley Preparation: mix the above ingredients as per the mentioned proportion and keep it aside. Step 2: Make our brinjals ready Ingredients: 2 sliced Brinjals 3 table spoon oil 3 table spoon water Preparation: Put the non-stick pan on stove. Add 3 table spoons of water and 3 table spoons of oil and let them heat for few seconds. Then, put the brinjal slices on the pan and cover the pan with lid and let them cook for 5-6 minutes. The bottom side of brinjal slices will be cooked by 6 minutes. So, flip the sides and add our prepared masala on the cooked side of brinjal. Using spoon, press the masala gently on the brinjal slice and spread. Now, again cover the pan for 5-6 minutes and reverse the side. So, the other side will also be cooked now. So, add masala on top of the slice and using spoon press it gently and again cover the pan 3-4 minutes. Final touch: Now, our spicy brinjal slices are almost ready. Turn off the burner and prepare them for serving. Garnish the masala brinjal slices with fresh parsley. You can also enjoy this with curd.
