Asian Style Prawn Cocktail


Ingredients

Ingredients: Prawns with tail: 1kg Juice of 1 lime Red Thai paste: 2 tbsp Tempura flour Panko bread crumbs For Red Thai paste: Bydagi chillies: 20 Coriander seeds: 4 tsp Galangal chopped: 3tsp Garlic chopped: 2 tsp Coriander leaves and stems: 2 tbsp Lemongrass chopped: 2 stalks Fish sauce: 1 tsp Groundnut oil: 2 tbsp Method for Red Thai paste Dry roast coriander n chillies, ensure it doesn't get burnt. Then grind all the ingredients with fish sauce, 1/4 cup water and groundnut oil. For the Asian Cocktail sauce: Eggless Mayonnaise: 5tbsp Tomato Ketchup: 1 tbsp Wasabi paste: 1/4 tsp Rice vinegar: 1tsp Salt to taste

Step By Step Method

  • Method for Pan-Asian prawns: Marinate prawns with lime juice, red Thai paste, salt for 1 hr. Then dust it with tempura flour , then dip in batter and roll it in Panko bread crumbs. Heat oil and deep fry the prawns till golden. Take out in absorbent paper. For the Asian Cocktail sauce: Eggless Mayonnaise: 5tbsp Tomato Ketchup: 1 tbsp Wasabi paste: 1/4 tsp Rice vinegar: 1tsp Salt to taste Mix everything together. In a cocktail glass put the purple cabbage and lettuce leaves. Then add the Asian cocktail sauce and put the fried prawns on top.
