Reused oil is bad for the heart. So then what to with left over oil? Frst of all, always use the right size frying pan, especially choosing a smaller pan for deep frying, so that you are not tempted to use more oil. Secondly reused oil is good in salad dressings, for idli podi, and even for making dosas and also for seasing. But never reuse the oil for deep frying.
