Tip Procedure :
The trick to make soft and tender mango pickle would be to mix the cut raw mango pieces with salt and turmeric which allows it to absorb salt and release its juices getting tender in the process for the next 2 - 3 days. Mix in the remaining spices for the flavours to be soaked in with a dry spoon and let it remain for a week as such. At the end of the week, add the oil and tempering for best results.
