PULIYOGARE ( Tamarind Rice )

Puliyogare is a popular spicy-tangy south Indian variety rice. It is especially relished as a travel food, as it is known for its long shelf life.


Ingredients

Ingredients for Puliyogare

2 cups of cooked rice

5 tablespoons of sesame oil

1 big lemon sized ball of tamarind (soak for 1 hour ) and extract its juice

½ teaspoon of jaggery

¼ cup of roasted peanuts

1 tablespoon of mustard seeds

1 tablespoon of channa dal

7-8 curry leaves

1 ½ teaspoons of turmeric powder

½ teaspoon of asafoetida

3-4 dry red chillies

Spices to be dry roasted and ground fine ( Spice Powder)

3 teaspoons of fenugreek seeds

2 tablespoons of Bengal gram

4 dry red chillies

1 teaspoon of roasted and ground black pepper

Step By Step Method

  • Heat the sesame oil, let the mustard seeds splutter, followed by the channa dal and dry red chillies. Add the asafoetida, curry leaves and the turmeric powder. Now add the tamarind extract, keep stirring, add water and salt. Let this mixture simmer for at least  20 minutes, till the volume reduces by half and thickens. Now add the jaggery,  roasted and ground spice powder to it and let it further cook for 5 minutes. Turn off the heat and let this mixture cool down. This spicy-tangy mixture is called “Pulikachal”. Add the roasted peanuts to this mixture. Add 3-4 large tablespoons of Pulikachal or as per your taste to the cooked rice for that amazing tamarind flavour. The cooked rice takes about 30 minutes to absorb the flavours of pulik anchal and there your delicious “Tamarind Rice” is all ready to be relished.
