Ingredients

KOFTA INGREDIENTS :- Mutton keema 5oogm-onion 2-3 nos sliced and fried and grind into paste…ginger garlic paste 4tspcatch red chilly pwd 1 tsp.catch.garam masala pwd 2tsp…salt to taste…finely chopped hara dahnia 4 tsp Mix every thing and make small small kofta just like a marbel in size. GRAVY INGEDIENTS :- Oil 250 ml….Onion 4 no. sliced , fried till golden brown and grind into paste…Ginger garlic paste 4 tsp. Haldi ½ tsp…catchRed chilli pwd 2 tsp….Dhania pwd. 3 tsp.. Sabut masala (hari elaichi, dalchini ,javitri , ) 2 no. each..Tej patta 4 no…Salt to taste Garam masala pwd.2 tsp…Dahi 200 gms…Kewra water few drops.

  • METHOD FOR GRAVY :- HEAT OIL IN A PAN ADD SABUT MASALA AND TEJPATTA ,ADD ONION PASTE ,GINGER GARLIC . ALL DRY PWD.. MIX WELL ,NOW ADD DAHI .. KEEP IT STIRRING TILL THE MASALA IS FRIED AND OIL IS RELEASED. NOW SLOWLY WITH LIGHT HAND ADD KOFTE IN IT NOW PUT THE FLAME LOW AND LET IT COOK FOR 20 TO 25 MIN.AT THE END SPRINKLE KEWRA ON IT . RICE INGREDIENTS AND METHOD :- BASMATI RICE 800 GMS, SABUT GARAM MASALA 20GMS , HARI MIRCH 6 NO. LITTLE SAFFRON SOAKED IN A MILK BOIL 2 LTS OF WATER IN A PATILA ADD SALT MIRCH AND SABUT MASALA IN IT.COOK FOR 15 MIN. NOW ADD SOAKED RICE IN IT AND COOK TILL THE RICE ARE HALF COOKED ,DRAIN ALL WATER FROM THE RICE.. NOW LAYERING OF BIRYANI …..PUT LITTLE KOFTA MASALA IN A BASE OF A PAN THEN 1 LAYER OF RICE ,AGAIN KOFTA .REPEAT THIS PROCESS FOR 3 TIMES..IN BETWEEN THE LAYERS ALSO AD FRIED ONION SLICES..NOW SPRINKLE SAFFRON SOAKED IN A MILK ONB THE TOP. COVER THE PAN .ON A SLOW FLAME GIVE DUM TO THE BIRYANI FOR ABOUT 20 MINS. LAZEEZ KOFTA BIRYANI IS READY TO BE SERVED WITH RAITA AND RED CHILLY CHUTNEY. ENJOY ?
