Rub the skin with salt, ground black pepper and soft butter. Place the chicken breast side down in a roasting pan. Cook in a pre-heated oven (200 degrees Celsius) for 15 minutes per 450 gm. Turn the chicken over and cook for the same time, breast side up. Then, place the chicken on a warm platter and let stand for 15 minutes before serving to allow the juices to settle and the meat to relax. You can use boiling water to deglaze the pan; use this as a gravy.
