Generally the green leafy dishes turn pale or brown. This happens due to over cooking and boiling. Adding turmeric to oil before putting green vegetable will retain the colour of vegetable. It is important to note that Palak is a very soft and light leafy vegetable and thus gets boils very fast. So to avoid disappointment of its brght green colour, add the palak puree towards the end of cooking
